VEGAN chocolate chip muffin recipe – SIMPLE and DELICIOUS

THE RECIPE
DRY INGREDIENTS
2 cups wholemeal spelt flour
2 tsp baking powder
1 tsp baking soda
3/4 cup cane sugar
1 cup vegan chocolate chips

WET INGREDIENTS
1/3 cup mild olive oil (or any other oil)
3 tbsp almond butter
1/4 cup unsweetened apple puree
200ml soy milk + 1 tbsp apple cider vinegar

1.Preheat your oven to 170c.
2.Stir the soy milk and apple cider vinegar in a measuring cup. Set aside for 10min until the milk starts to thicken up like buttermilk.
3.Pour the mixture into a large mixing bowl, then add the rest of the wet ingredients. Beat it up with a hand mixer for 1 minute.
4.Sift in the flour then add in the sugar, baking powder and soda. Beat the batter until smooth for a couple of min.
5.Finely, fold in the chocolate chips (don’t mix too hard so that the batter will stay fluffy).
6.Transfer the mixture into a lined muffin tin (fill it 3/4 through) and bake for 15-20 min until golden and a toothpick inserted in the middle of a muffin comes out clean.
