3 lb pork chops, boneless and skinless, cut into 1½-inch thickness
1-5¼ oz yellow onion, cut into rings
1 lemon, cut into rings
½ cup ketchup
½ cup brown sugar
¼ cup apple juice
salt and ground black pepper to taste

To Serve:
¼ cup roasted vegetables per serving
¼ cup mashed potatoes per serving
