These mini-omelettes are easy, portable, and most of all delicious! Sure to be a hit with the whole family.

Here’s the recipe:
1/4 cup finely chopped onion
1/4 cup finely chopped broccoli
1/2 cup cooked, ground breakfast sausage
2 tbsp heavy cream (or milk)
1/2 cup shredded cheese (use your favorite)
Preheat oven to 350 degrees
In a skillet, cook the breakfast sausage until done
In another skillet, cook the onion and broccoli until softened
While those are cooking, scramble the eggs in a bowl and mix in the heavy cream.
Spray a 6 muffin tin with cooking spray or other release agent to prevent sticking
Add eggs in even amounts into the muffin tin
Spoon in the sausage and vegetables evenly into each muffin
Top each muffin with shredded cheese
Bake in oven for 12 to 15 minutes, or until muffins are no longer liquid on the top. Check for doneness with a cake tester
