How To Make Takoyaki (Recipe) たこ焼きの作り方(レシピ)





Takoyaki, or Octopus Balls is one of Japan’s best-known street food originated in Osaka. Whether you make traditional style with bits of octopus or other alternatives, these ball-shape dumplings are fun to make with your friends and family!

Prep tim: 15 minutes
Cook time: 10 minutes
Serves: 26 pieces

Ingredients:

1-2 green onions
1 Tbsp. pickled red ginger (Beni Shoga) and more for garnish
4.2 oz (120 g) cooked octopus (See note)
¼ cup (4g) katsuobushi (dried bonito flakes) and more for garnish
1 cup (4.2 oz/120 g) all-purpose flour
2 tsp. baking powder
½ tsp. kosher salt
2 large eggs
1 tsp. soy sauce
1½ cup (360 ml) dashi stock
2 Tbsp. or more vegetable oil for cooking
⅓ cup (15 g) Tenkasu (tempura scraps)

Topping

Takoyaki Sauce or Tonkatsu sauce (Recipe follows)
Japanese mayonnaise
Dried green seaweed (Aonori) for garnish

Takoyaki Sauce Recipe:

3 Tbsp. Worcestershire sauce (Usutah So-su)
1 tsp. Mentsuyu
¾ tsp. sugar
½ tsp. ketchup
