Blueberry Muffin Recipe:
1-1/3 cup of flour
1 teaspoon baking powder
1/2 teaspoon salt
1 stick unsalted butter Softened
1 cup of sugar
2 large eggs
1/2 cup sour cream
1 teaspoon vanilla extract
1 cup frozen blueberries not thawed.
First Cream the butter and sugar together till light and fluffy about 3 minutes.
Then add in your eggs one at a time then add in vanilla.
With mixer on low or by hand fold in half the sour cream and half or the dry ingredients (flour, salt, baking powder) Then repeat just until combined, please do not over mix.
Lastly fold in the frozen blueberries gently. then fill your muffin tins 3/4 full.
2 tablespoons cold butter
2 tablespoons sugar
1/4 cup of flour
Cut with pastry cutter or 2 knives or your hands, just until butter is in small pea like sizes. It will look a little sandy that’s normal. Then sprinkle on top of each muffin before putting in oven.
You can spray muffin pan with cooking spray or grease them with butter and flour.
Bake at 350 degrees for 24 minutes let cool on pan for at least 5 minutes. Let cool completely before you store them in air tight container. They will stay fresh for 3 days
