Creamy Chicken & Spinach Lasagna with tomatoes





This dish could be a romantic dinner for two, family feast (with sides) or special dish to bring for a gathering. I love the tomatoes in this recipe but feel free to substitute or omit to your likings! Try it out and comment below on your thoughts and suggestions! Thanks!

Ingredients
Preparing Chicken:
1 Tbsp Olive Oil
2lbs Boneless Chicken Breast
1tsp Black pepper
1tsp Garlic Pepper
1tsp Salt (I used Pink Himalayan salt)

16oz pkg Lasagna noodles
4-5 Roma tomatoes (pat dry excess moisture)thinly sliced

Preparing Sauce:
1Tbsp Olive Oil
1 bulb minced Garlic
4 cups Heavy cream
2 Tbsp Onion powder
1 1/2 Tbsp Chicken bouillon
1 1/2 Tsp Black pepper fresh, ground
1 Tbsp Parsley, dried (I put a little over! Lol)
1 Bag Spinach , fresh

Add 1tbsp of cornstarch if too thin; add milk if too thick

Layering:
Shredded chicken
Prepared sauce w/ spinach
2 cups Mozzarella cheese
2 cups Parmesan cheese
Sliced tomatoes
Repeat.

Top layer:
Remaining sauce
Remaining mozzarella cheese
Remaining sliced tomatoes
1/2 cup Parmesan cheese
Parsley, dried

Bake at 375 degrees for 30-35 minutes
Cool for about 15mins and enjoy!

Optional:
Fresh Parsley for garnish, plating
Broil on LOW for 5 mins to crisp and brown
